Aunt Irini’s aromatic cake

With a smell of orange and cinnamon

Aunt Irene, my beloved, lived in Nafplio and her house was next to the orange grove. I will never forget the scents from the orange blossoms…but also the beautiful orange balls that protruded along the length of the branches during the winter months.

Aunt always used fresh orange juice in her sweets and loved cinnamon. Among her sweets, each of which was better than the other, I also remember this Divine cake she made for us… to take it to Athens, to have it for breakfast… Even today when I make it at home, I make it with cinnamon and orange. Sometimes the aunt decorated the cake with cloves. She used to put them in beautiful colored molds and decorate them with candies and cinnamon sticks.

    Step 1

In the bowl of the mixer, beat the butter and sugar at medium speed with the whisk for 6 minutes until they become "fluffy".

    Step 2

Add the eggs, orange zest and cinnamon one by one and mix lightly until the ingredients are homogenized.

    Step 3

Add the orange juice, liqueur and flour little by little and mix in the mixer until the dough is soft.

    Step 4

Lightly butter and flour the cake tin and pour in the mixture.

    Step 5

Bake in a well preheated oven at 180°C for about 1 hour.

    Step 6

Dip a knife into the cake to see if it is still moist in the center.

    Step 7

If it comes out clean, take it out of the oven and leave it in the form to cool without covering it.

    Step 8

If you want, sprinkle with sugar that we have beaten together with cinnamon or just with two cinnamon sticks and marsh mallows.
