Cauliflower au gratin
A vegetable treasure…
Cauliflower is a vegetable of high nutritional value that we must include in our diet. The US Centers for Disease Control and Prevention (CDC) ranks it 24th on its list of the most nutritious fruits and vegetables.
One cup of raw cauliflower provides only 25 calories and contains 5 grams of carbohydrates, while it covers almost 77% of the vitamin C intake required in an adult, 20% of the daily intake of vitamin K, and about 10% of vitamin B6 and folic acid. In addition it is a good source of calcium, magnesium, phosphorus and potassium
Highly nutritious cauliflower enhances brain function, helps regulate blood pressure, is anti-inflammatory, enhances cardiovascular function and contributes to weight loss due to the fiber it contains. Even the high content of vitamin K enhances bone health, calcium absorption.
We can serve cauliflower as a salad or side dish, as a main meal with tomato or turmeric or as baked au gratin as prepared by our award-winning chef Costas Georgatzas and he suggests us an incredible gruyere cream.
