Lemon jam

The secret recipe… for 150 years

If you pass from Karystos, you should visit the historic archaeological site,  Montofoli Estate. There is an impressive staircase with 157 stone stairs which are remains of old buildings. The vineyard of 16 acres is organic. The famous sweet wine “Montofoli Estate” is made just as it had been in ancient times.κρασί, ποικιλίες

The varieties of wine are from Greek islands such as red Liatiko from Crete, white variety Athiri from Rhodes and Asyrtiko and Aidani from Santorini. Because of the climate of Karystos with the strong winds, the vineyards’ leaves tend to fall and the grapes bask under the sun. That’s how the wine acquires its special colour and aroma.

The owners of the Estate make jams from the famous lemons and oranges of the citrus garden.

My beloved friend Danae Karakostas shares the secret recipe with us .

Every time I go to the Estate, I try their dreamlike wine, some chocolate and certainly the lemon or orange jam.

Ingredients

    Directions

    Step 1

    Clean the lemons and separate the peels

    Step 2

    Cut the peels into pieces.

    Step 3

    To de-bitter them, boil them in water for 10 minutes, strain and repeat 2 more times.

    Step 4

    Finely chop the peels and put them in the saucepan with the lemons and add the sugar and water.

    Step 5

    Boil on high heat and stir occasionally so that it does not stick to us.

    Step 6

    Just before it starts to "set", mash with a stick blender.

    Step 7

    Continue boiling until the jam "sets".

    Step 8

    A few minutes before taking it off the heat, add the orange juice.

    Step 9

    Let the jam cool down well and stir it to homogenize the mixture.

    Step 10

    Put the now cold jam in sterilized jars and keep in a cool and dark place.
