Of course it is not one of the low cost meals but a lobster spaghetti marks the summer, so we can enjoy it even for an anniversary day for us…

The recipe has several secrets that Stavros revealed to us when I visited him in order to present the gastronomic culture of the area in the book “Central Greece Get a taste” published by the Region of Central Greece in two languages.

Lobster spaghetti

From the restaurant Maistrali, Itea Fokida



    Step 1

    In a saucepan with a little hot olive oil, sauté the peppers, the cherry tomatoes, the spring onion and the garlic and mix.

    Step 2

    Cut the lobster vertically and sauté it together with the peppers and the rest of the ingredients.

    Step 3

    We quench with cognac and add the grated tomatoes.

    Step 4

    We boil the al dente pasta in salted water according to the indication on the package and strain it.

    Step 5

    We add a little water from the pasta to the lobster sauce, to bind better.

    Step 6

    Once the many liquids are absorbed, add the pasta.

    Step 7

    We bring to a boil, stir lightly and serve.


    A rich green salad and white wine, especially my favorite assyrtiko, complete the delicious feast.
