Pasta with tomato sauce and olives –

indescribably delicious!

Cool summer recipe fast and very delicious. I tried it in beautiful Chios island by my friend Charalambos Theocharis, a well-known chef. We can replace handmade spaghetti with pennes, spaghetti, baked pasta or linguine.

Ingredients

FOR THE TOMATO SAUCE

    Directions

    Step 1

    Boil the pasta for 15 minutes or according to the indication of the package in salted water with olive oil.

    Step 2

    Immediately afterwards strain them.

    Step 3

    At the same time prepare the sauce.

    Step 4

    Chop the onion, garlic and tomato.

    Step 5

    In a saucepan put all the ingredients together with olive oil.

    Step 6

    Let them simmer for 15 -20 minutes.

    Step 7

    Once the sauce is ready add the olives and mix lightly with a wooden spoon.

    Step 8

    Put the handmade spaghetti in the sauce.

    Step 9

    Sprinkle with freshly ground pepper and gruyere cheese if you want.
