The secrets of eggplant

 

  • To reduce bitterness we cut them in slices and sprinkle with coarse salt. We let them strain for 30 min. We place a heavy plate on top of them so the air trapped in the sponge like flesh can get out.

 

  • After we wash out the salt from the slices with plenty of water and then cook them.

 

  • The eggplant is a vegetable that characterises the Mediterranean diet.
