Ingredients

For 2 tarts 24 cm.
200g cow butter frozen
1 egg whole
lemon zest from one whole lemon
100g powdered sugar
300g soft flour
For cream
300g katiki cheese of Domokos,fresh or other creamy cheese
1 vaniline
500 ml heavy cream 35% fat, frozen
¾ cup powdered sugar
FOR THE GARNISH
500 g kiwi peeled and cut into slices
of 1 lemon Lemon Juice
FOR FINISHING
a stem Basil

Annula’s kiwi tart
A birthday flavoured dessert

Many times I think of what cake to buy for my friends’ namedays or birthdays and I always end up in a nice chocolate cake from a well-known pastry shop.

My friend Alexander asked me once to make a tart with fruits for his birthday and I figured it was quite easy.

My friend Anna Gasparis gave me the recipe for 2 tarts because one is never enough. Therefore, I tried different combinations on each tart, such as kiwis on the first tart and bananas and forest fruits on the other.

For creamy cheese you may use either katiki cheese of Domokos, or perhaps anevato cheese of Grevena or any creamy cheese you like.

Nonetheless, making kiwi tart has become a must ever since. My friends always ask me to make tarts which they happily devour in a flash, so I asked Anna to give me the recipe with double the dose.

We may ideally serve our kiwi tarts with kiwi liquor or mint tea. It’s up to you to choose ….

Annula’s kiwi tart

First we prepare the dough of the tart.

We cut the butter in small cubes.

Then we whisk the egg with the zest and mix it lightly with the butter.

In a bowl, we mix the powdered sugar and the sifted flour. We add the butter and rub it gently with the flour using our fingers, in order to make the dough.

We knead softly for a while and we wrap the dough up with a membrane.

We let it cool in the fridge for 30 minutes.

We divide the dough in two for the two tarts and put each dough between 2 membranes then use a roller to make it thin.

Afterwards we place the dough on pans and we make some holes on it with a fork.

Bake in a well preheated oven, in the air, at 170°C for 25 minutes.

Remove from the oven and let it cool for 30 minutes.

In a dry and frozen mixer bin, we whisk the cheese and vanilline at moderate speed for 5 minutes.

We gradually add the frozen heavy cream, while mixing for 2 minutes until the cream smooths out and then we add the powdered sugar.

We keep it up until we get a nice and smooth cream which we fill the tarts with.

We cut the kiwis into slices and top our tarts by drawing circles with the slices of fruits.

Then we cover the tarts and let them cool for 1 hour in the fridge.

We can finally cut into pieces and serve. For decoration we may use a stem of basil on each piece.
