Anthogalo cheese from Crete

We make our own creamy cheese

We can make our own cheese which is delicious . Therefore, why buy it when it is so easy to make with our own ingredients at home where it can always be fresh and tasty.

It started from Crete and spread around the world. According to mythology  it is the first cheese to be made by Polyphemus.

Whatever the truth is, we can enjoy our own homemade anthogalo cheese.

Anthogalo creamy cheese

Steps

Put the milk in a saucepan and heat it.

Once the milk starts to boil, add the yoghurt and mix it with a wooden spoon.

Add the rennet stirring continuously.

Immediately afterwards we strain the mixture with a cheesecloth and so we separate the choumos(which is the white broth) from our cheese.

Put the anthogala in a cheese-making bag and hang it up in order to strain the liquids in a bowl and get the cheese to dry.

The place that anthogalo cheese "matures" must be well ventilated, cool and especially without any sun.

After 5-7 days remove the anthogalo cheese from the bag and put it in a jar.

Keep it in the fridge.

We use it on our salads, pasta or risotto.

We can also spread the anthogalo cheese on rusks and pour them with honey which is a very good combination.. we can also use strawberries or walnuts.
