Eggplant is a favorite flavor and its combination with Greek cheeses, gives it the perfect harmony. A few days ago, my friend Tita, who is a travel agent, was invited by a friend, the sweet and always smiling Elizabeth of Rouga, which is one of Thessaloniki’s picturesque spots, to have a good time with flavors, small talk and good music.

Very easy food to make and it goes very well with a nice wine or toasted bread. We must remember that eggplants offer nutritional benefits to our body. They are an excellent source of fiber, potassium, magnesium, copper folic acid, vitamins B1 and B6 and strengthen our immune system.

The Eggplant’s anthocyanins can improve memory and mental function. They also help lower cholesterol. Eggplants act as an antidepressants and are a powerful antioxidant.

In any case, eggplants can be made in many ways and are particulary tasty. In fact, when they are baked, they are lighter. Elizabeth puts them in a nice earthenware and they are very beautiful… they whet your appetite.

Using a sharp knife, we carve the flesh out of the eggplants.

We sprinkle them with coarse salt and rub lightly to remove the excess salt. We leave them in the strainer for about 20 minutes.

We rinse them with cool water and dab them with absorbent paper to dry.

We put them in a baking pan and bake in a well preheated oven at 200 ° C for 15-20 minutes on the heating elements.

In a frying pan, we sauté the onion and garlic in olive oil over medium heat, until they become transparent.

We add the tomatoes, sugar, salt and freshly ground peppers and stir, and boil them for 10 minutes.

We add a little parsley and remove it from the heat in 1 minute.

We pour over the eggplants and sprinkle them with the graviera and crumbled feta. We sprinkle their surface with ouzo for a special aroma.

We put the pan in the oven and bake for 10 minutes to melt the cheeses. For the last 3 minutes turn on the grill to give the feta a brownish color.
