1 kg. of ripe tomatoes
2 large dry onions
Half a bunch of fresh parsley chopped
1 hot pepper chopped
500 gr. feta cheese PDO
1 glass of fine olive oil

Rich mountain taste …

Pavliani is one of the beautiful mountain villages of Oiti. The inhabitants have taken great care of their environment and have created wooden sculptures, playgrounds and a dreamy riverside path. The village is drowned in firs, pines and flowers. Unique aromas and colors and sea view. We wash the eggplants, cut them in half, put them in salted water and leave them for 1 hour.

We strain them and rinse them. We dry them with absorbent paper.

We put a little olive oil in a deep pan and once it is hot enough, lightly sauté the eggplants.

We put them with the skin facing down, on a baking 0. We grate the tomatoes and onion.

We put the olive oil and the onion in a pan to fry and as soon as it withers add the tomatoes, the sugar, the salt, the peppers and the pepper and let them boil until it becomes a concentrated sauce.

We lightly carve the eggplants and put feta sticks making 2-3 incisions in each eggplant.

We pour the sauce on them and add the parsley.

We bake in a preheated oven at 200° C for 45 minutes.
We remove them from the oven and leave them to reach room temperature for a while and serve.
