200 gr. black-eyed beans from Feneos
1 star anise
2 spring onions finely chopped
1 small dry onion finely chopped
1 tsp. Smoked paprika
2 tbsp. οregano fresh or dried
2 tbsp. marjoram or mint
Half a cup of fine olive oil
4 tbsp. Lemon Juice
capers or pickled cucumber cut into thin slices
2 tomatoes diced or cut into slices like quinces
zest of a fresh lemon unwaxed
Half a cup of green olives pitted
Half a tsp. rosemary

A very nutritious salad

I had heard many times about the Ranch, the incredible theme park located in Sofiko, Corinth, but I hadn’t had the chance to go. So a while ago we decided to take a vacation and live a little in a Far West atmosphere. The kids that accompanied us went crazy with the endless games, activities and walks, but we adults also had a lot of fun.

After the walk in the park we went through the Saloon and tried various flavors from their buffets. Among other things, I was so won over by the salad with black-eyed beans that I asked for the recipe and I present it to you.

Black-eyed beans are of high nutritional value and the combination with tomatoes and onions highlight their vitamins and trace elements in the best way. And we repeat once again that we do not combine animal protein and cheese with beans.

We put the black-eyed beans and water in a saucepan and let them boil for 5 minutes. We drain them and discard the water.

We put the beans in clean water again together with the star anise and let them boil for another 20 minutes. 5 minutes before removing from the heat, we add a little salt.

We drain them, discard the star anise and put them back in the pot, add the lemon and rosemary and shake the pot. We leave them on the hot burner for 1-2 minutes to evaporate their liquids.
