3 flask eggplant
5 zucchini medium
4 potatoes big
4 tomatoes ripe
2 dry onions
2 cloves garlic
Parsley chopped
170 ml white wine Zitsas
2 cups olive oil
Sea salt
Freshly grated peppers
wild oregano
wild thyme

Cooking in clay pots gives strong flavor. Unforgettable experience the braim (greek ratatouille) cooked in traditional oven… with warm bread with sourdough and dreamy feta cheese… with aromas of the Epirus mountains…

 Little secrets

For the briam we use fresh vegetables and ripe tomatoes of the summer.

We need as aromatic and fruity wine so we have a tasty result.

If we need we add green and red peppers.

We can use crumbles of kefalograviera cheese in the briam and sprinkle grinned kefalograviera or pecorino cheese.

We can eat briam a day after and its still delicious.

We wash and clean all the vegetables.

We ground one tomato at the grinder and the rest cut in irregular shapes.

In one big basin we cut the zucchini in slices, eggplants and potatoes.

Cut feta cheese in cubes.

Chop the garlic, onions and parsley.

We add grinned tomatoes, cut tomatoes, salt, pepper, little oregano, savory and olive oil.

Mix all the ingredients very well and place them in individual clay pots.

Between the vegetables we add half the quantity of the feta cheese.

We add a little bit of hot water and a local wight wine.

We cook in well preheated oven at 170°C for about an hour. When it get a nice color we cover it.

When we take off the oven the clay pots we sprinkle with the rest of the feta cheese and sprinkle with a mixture of oregano and savory.
