5 eggplant flasks sliced

Briam is one of the favorite delicious creations since all the vegetables are at their “best” and the tomatoes are very tasty. In fact, if we have the pleasure of being botanists, like those of Marina, then the food takes off. The PDO feta cheese and a pre-fermented village bread blend harmoniously with the briam and give a special taste. The combination of all vegetables gives us a lot of fiber that contributes to good gut health and vegetables are a good source of vitamins, magnesium, copper, iron, etc.


Put colorful peppers or sliced ​​tomatoes in the briam if you want. Briam is made in many parts of Greece and the Mediterranean countries. It is found with many names such as sofagada, tourlou, sympetherio and sufiko. In areas of Epirus but also in Sicily and Lower Italy they combine it with chicken or even fish.

The secret is to mash the vegetables without losing their shape and we should not add too much water at the end of cooking, there should be a little sauce left and concentrated.

We put all the vegetables in a pan and we mix them.

We stir the garlic into the olive oil and we pour over the briam.

We add the tomato sprinkled with sugar, the pulp and all the herbs, salt, pepper and sprinkle with ouzo. We mix well with our hands.

We pour the water and we bake in a preheated oven at 200o C for 45-50 minutes.

We cover the pan for the first 30 minutes and then we uncover it.

We remove the pan from the oven and we let the briam boil.
