Ingredients

600 gr. ground beef
300 gr. minced pork
1 dry onion grated
200 gr. gruyere of Syros cut into cubes
1 garlic clove crushed
4 tbsp. fine olive oil
1 coffee cup of chickpea leavened rusk or breadcrumbs
1 tsp. dry οregano
1 tsp. Thyme
1 tsp. smoked paprika
50 ml milk
zest from a dewaxed lemon
1 egg
1 bunch of Parsley chopped
1 bunch of mint chopped
salt
freshly ground peppers
1 shot of Ouzo

The tastiness…

Every time we make burgers in the summer I always nostalgically remember the big burger pan that my mom prepared in Nafplio and before we went to the sea, we left it in the oven to bake it with the potatoes and pick it up when returning from swimming. I told my friends yesterday and we laughed…

So Efi was inspired and today she made us burgers stuffed with the incredible gruyere San Michalis from Syros… spicy and rich as it should be… and because it is summer… let’s say…  we pay attention to our diet and accompanied the burgers with broccoli which is a superfood.

It is a very easy to make and very tasty food and the secret is the caramelization of the onions and the aromatics…

Steps

In a non-stick pan we put 1 tbsp. olive oil and sauté the onion until caramelized. We add the garlic and thyme and mix.

We put the caramelized onion, the nut, the olive oil, the oregano, the milk and the paprika in the blender and beat until the mixture is homogenous.

In a large bowl we put the two minced meat, the egg and the lemon zest.

We knead lightly until the ingredients are mixed and add the mixture from the blender, the parsley, the mint, the peppers and a little salt.

We knead vigorously and cover the bowl with a transparent film. We leave it in the fridge for 3 hours.

2 seconds

We take it out and knead it for 2 seconds and start shaping the burgers to the shape we want.

We open them with our hand in the middle and we put in the pieces of cheese and close them again.

We sprinkle them with ouzo and put them in a pan in which we have laid a baking paper on or even on the grill.

30-40 minutes

We bake in a preheated oven at 180° C for 30-40 minutes.

We remove them from the oven and serve with broccoli or mashed potatoes or celery root and pieces of gruyere cheese.

If we want, we sprinkle the burgers with oregano.
