Ingredients

FOR THE DOUGH
500 gr. flour for all uses
1 tsp. salt
2 tbsp. olive oil
1 tbsp. vinegar
carbonated water bottled "as long as it takes"
FOR THE FILLING
700 gr. spinach cut by hand
leeks chopped
half a bunch of dill chopped
half a bunch of Parsley chopped
half a bunch of chervils and poppies chopped
half a bunch of mediterranean hartworts chopped
1 bunch of spring onions chopped
10 chard leaves cut by hand
1 zucchini grated
1 dry onion grated
2 fresh eggs
100 ml olive oil
400 gr. Feta cheese coarsely grated
50 gr. Carolina rice
2 shots of Ouzo or tsipouro
1 pinch of Sea salt
freshly ground peppers

Authentic taste of nature

Roumeli is famous for its pies. Women with mastery open a leaf and fill it with all the herbs in combinations that give a special taste and aroma. At the end, they lay the sheets and close the pie, sprinkle it with tsipouro, cross it and let it bake lazily and the filling melt.laxanotyropita_roumeli_1

I tried such a genuine pie from Katerina which is one of the best of its kind…

She opens a sheet while singing softly and really excels at it. She uses water from the village spring but recommends us for carbonated bottled water to use carbonated water.

First we prepare the dough that should be medium and pliable.

We put the flour on the kitchen counter and create a hole in the middle to put the salt and the liquid ingredients.

We knead vigorously by hand and as soon as the dough comes off our hands, divide it into 5 balls.
