Ingredients

1 small cabbage
1 cup of coffee barley medium
2 large dried onions finely chopped
2 spring onions chopped
Half a bunch of dill or fennel
Half a cup of fine olive oil
Half a cup of coffee Ginger grated
1 small fennel (finokio) root chopped
Juice of 2 fresh lemons
1 shot of Ouzo
salt
freshly ground peppers

Fasting and very easy

The kitchen of my friend Efi, is characterized by freshness, is very healthy with excellent quality Greek ingredients and the choice of ingredients is based on their nutritional value. Efi’s delicious creations are imaginative and very tasty.


 

For today she chose a very easy food with cabbage. She did not want to make the classic cabbage rice with the tomato sauce, nor the cabbage risotto, nor again the Cycladic version with the egg-lemon sauce. So he made a cabbage with aromas of the Greek land and barley.

Her plate had fresh ginger, wild fennel self-seeding in her garden, finnochio, onions, lemon juice and for a tasteful twist she used ouzo to extinguish the onion’s tang.

Cabbage has a rich antioxidant activity, as it is a very good source of β – carotene, Vitamin C, manganese, fiber and Ω3 fats. The content of polyphenols is top notch and has anti-inflammatory effects.

We wash the cabbage well and we cut it into pieces.

15 minutes

We put it in a basin with water and vinegar and leave it for 15 minutes.
We strain it.

3-4 minutes

We saute the onions in olive oil for 3-4 minutes in a saucepan to wither.

We add the cabbage and then add the ouzo.

We pour the remaining olive oil, hot water until the cabbage is covered, we add the finnochio and cook over medium to high heat for 15 minutes.

We shake the pot and add the barley, ginger, dill, a little salt and let them boil for another 10 minutes.

We remove them from the heat and let them rest for 10 minutes.

We include with the lemon juice and we shake the pot.
