Ingredients

1 whole chicken breast fillet baked and cut julienne or into square pieces
1 lettuce freshly chopped for the salad
FOR DRESSING
1 tsp Garlic powder
2 tbsp. fresh lemon juice or the juice of 1 lemon
1 tbsp. Dijon mustard soft
1 tbsp. Worcestershire sauce ready made
1 cup of Hellmann’s mayonnaise
A cup of Parmigiano Reggiano
80 gr. Parmesan flakes
1 tsp. anchovy paste
2 tbsp. olive oil
2 pinches of salt
1 pinch Freshly ground pepper

Ceasar Salad
Caesar Salad, the famous favorite salad

Caesar Salad is one of the most famous salads in the world and has its own history. We need to make it clear that it has absolutely nothing to do with Julius Caesar, as everyone thinks. The truth is that it first appeared in Mexico in 1924. Chef Caesar Cardini, of Italian descent, had set up a family restaurant in Tijuana and the salad was much loved. From Mexico it spread to the USA.

The salad was discovered by chance when during a big celebration, the kitchen ran out of ingredients and the chef created the salad to cope. The original salad was based on lettuce and garnished with grilled chicken fillet, bacon, parmesan, and a dressing containing olive oil, mustard, garlic, vinegar and egg yolk, anchovies and corn were added later. There are many variations.

The story was spread to Great Britain, and from there to the rest of Europe, by the American Wallis Simpson, the wife of King of Great Britain, Edward VII. Caesar’s daughter informs us that the salad had whole lettuce leaves with all the ingredients on each leaf and was eaten with your fingers.

In any case, the salad is not only a side dish but can also be a main course for a light meal or dinner.

And certainly the combination of chicken with lettuce is very beneficial.

Ceasar Salad

FIRST WE MAKE THE DRESSING.

In a bowl, we whisk together the garlic, lemon juice, anchovies paste, mustard, Worcestershire sauce and olive oil until the mixture is homogeneous.

We add the mayonnaise, salt, pepper and whisk them well. We taste it to see if we like it and the Caesar sauce is ready.

We put the lettuce in a large bowl and between it the chicken pieces. If we want we, add aromatic croutons.

We pour over the sauce, sprinkle with the grated parmesan and put parmesan flakes in between.

LITTLE SECRETS

The dressing of Caesar salad, if we put it in a bowl that closes airtight, can be kept fresh in the refrigerator for 3 days.
