Ingredients

500 - 600 gr. all-purpose flour sifted
200 ml lukewarm water or half water, half fresh milk
20 gr. fresh yeast or 11/2 sachet of dry yeast
1 tbsp. sugar
60 ml fine olive oil
1 tbsp. salt
100 gr. melted butter to spread
250 gr. feta cheese PDO crumbled with a fork
1 Florina pepper without seeds, chopped into slices or diced
FOR SPREADING
butter
sesame or 1 tbsp. yoghurt, optional

 Homemade bread

Sometimes, making our favorite bread “sounds” hard… we may have even tried to and it didn’t work out. What is certain is that we did not have the right recipe with the proportions and the little secrets that my friend Efi gives us.

She is used to making it and it is liked a lot. Each time following the recipe you can add your own aromatic, oregano, thyme, rosemary or even use the cheeses you like, yellow, smoked or Roquefort and sliced mushrooms. I really liked the last time I put in bacon after I cooked it for a bit on a non-stick pan and cut it into small pieces.

What excited my little friends was when I put in pieces of grilled sausages. The bad thing was that they kept constantly asking for it.

In terms of shape you can make buns or loaves or even shape the dough into braids.

The choice is yours and you will definitely love this recipe.

In a bowl, we dissolve the yeast with water or half water, half milk and mix well. Be careful, the water should be lukewarm to warm.

We add 2 tbsp. flour and the sugar.

20 minutes

We cover the bowl with a towel and leave it for 20 minutes in a warm place to activate the yeast.

Then in a large bowl or in the bowl of the mixer we put the flour, the olive oil, the salt, the yeast and we knead until we have a pliable dough, which doesn't stick to our hands.

We spread 2 tbsp. olive oil on the dough.

1 hour

We cover it and let it rest in a warm place for 1 hour.

We divide the dough into 6 equal-sized balls, butter them and add the cheese and pepper. Knead again so that the cheese goes to different places.

We spread the dough with our hands and shape buns into the shape we want.

We lay a baking paper on a baking sheet and we spread the buns on it, but leave space between them because they will swell.

We spread butter or yogurt on the buns and optionally we sprinkle them with sesame or black seeds or poppy seeds.

We cover it with a towel and leave the cheese bread to rise for 30 minutes.

We bake it in a preheated oven at 180° C for 40 minutes.
