My friend is the correspondent of emvolos.gr in Mykonos and Germany, in the field of gastronomy. So after presenting her title, “she has to” cook for us every day in order to strengthen us… Anyway, what characterizes the cuisine of my cosmopolitan girlfriend is the simplicity of the ingredients and the easy preparations with a very tasty result. We mash the cheeses in a large bowl using a fork.

We add the eggs, fennel, paprika and knead lightly with our hand.

We sprinkle with flour little by little until the dough comes off our hands and it is not tight.

We shape our croquettes in the shape we want like meatballs (soutzoukakia). like balls, big round ones and we roll them on the flour.

We put olive oil in a deep and large pan and as soon as it is hot enough, fry the croquettes turning them using tongs.

On a large plate we spread an absorbent paper and we place the croquettes on it, so that the excess olive oil will be absorbed.
