Very easy to make and delicious
Efi is a dear friend of mine who lives permanently in Dusseldorf. So my getaways to her beautiful city are frequent and our memories are filled with laughter, hugs, excursions, surprises, colors, aromas and unique flavors…
Efi is a member of our gastronomic family, having owned a well-known restaurant in Brussels until a few years ago.
These days she is “stranded” in her home in Mykonos… and she sends me photos of her creations, for our friends of Emvolos, who accompanies her in Germany and informs her about the news of Greece, objectively and responsibly.
Of course, I’m upset because I’m not with her, to try very easy recipes, I would say even lazy ones since most of the time we would chat, sitting on her balcony analyzing things, gazing at the endless blue. Now I only gaze at it online. The tranquility of Mykonos at such a time is unique and Efi told me
“Girlfriend, in the narrow streets of the city I can hear my footsteps, the birds never sang so loudly before and the sounds of the sea are wonderful”…
Efi gives us the recipe of the fragrant cheese pie she made without a sheet (fillo), with soft velvety feta (cheese), yogurt, eggs, she sprinkled it with smoked paprika and put a few olives next to it to bring to mind Greece, which she misses during the winters…

In a large bowl we put in the yogurt, eggs, olive oil, pepper and mix them well until the ingredients of the mixture are homogenized. |

We crumble the feta with a fork and add it to the mixture, while stirring. |

We sift the flour and add it together with the baking powder slowly, putting our hand deep in the bowl so that it mixes well. |

If the mixture is too tight, we add a little hot water and stir it again. |

We pour the mixture into an oiled oven pan and spread the surface evenly. |

50 minutes

We bake in a preheated oven at 180o C for 50 minutes, until it is well-browned. |

|
We take out the pie and let it cool for 20 minutes. |

We cut it into pieces and sprinkle it with smoked paprika to go well with ouzo or wine. |
