Ingredients

FOR 4 PEOPLE
400 gr. chicken fillets
500 gr. barley medium
100 gr. red pepper
100 gr. green pepper
100 gr. yellow pepper
8 cherry tomatoes
1 dry onion medium
1 clove of garlic
50 ml. fine olive oil
1 cube of chicken broth
1500 ml water
10 gr. butter of your choice
salt
Freshly ground white pepper
FOR THE FINISH
4 sprigs fresh parsley chopped

A delicious creation that is delicious and uplifting

We cut the chicken into thin strips, we rinse it, we drain it well by dabbing it with a paper towel.

Then we marinate it with a little salt and white pepper.

We wash and we cut the peppers into small cubes.

Finely we chop the onion and garlic and we cut the cherry tomatoes in half.

We heat the water in a saucepan and we add the chicken broth cube.

We put the olive oil in a medium saucepan and as soon as it heats up, we sauté the chicken for 3-4 minutes, until it gets a nice color.

Then we add the onion, garlic and we sauté lightly for a while.

We add the colorful peppers, we sauté for 2 minutes and we stir.

Once the peppers "wither", we add the barley and we sauté it as well.

The barley will start to acquire a more intense color and we slowly add the hot chicken broth, stirring at intervals and we let it boil for 5 minutes.

Immediately after, we add the cherry tomatoes and we test if we need salt and pepper.

We cover the pot with the lid, we turn off the heat and we leave it on the eye for about 8-10 minutes, until the barley absorbs all its liquids.

Finally, we add the butter and we mix lightly and our delicious creation will get a wonderful shine.

We serve the barley in deep dishes, putting the chicken fillets on the surface, sprinkling lightly with the parsley.
