Ingredients

1 chicken breast cut into pieces
3 cups of coffee vermicelli
1 glass of water Carolina rice or long grain
1 tbsp butter salted
1 tbsp Sesame oil
1 tbsp olive oil
2 glasses of chicken broth
Sea salt
freshly ground peppers
1 bay leaf

My beloved Aunt Sophia was an excellent cook … she had no children and so I was lucky because she did all the tricks for me, she liked to spoil me … and she masterfully prepared the food I loved. She was the first to introduce me to the kitchen of perfumes … Her origin is from Istanbul and her whole life in the kitchen … where she prepared epic meals for her beloved friends and relatives.

One of her delicious recipes for children, I prepared the day before yesterday and I present it to you.

Chicken pilaf Constantinople style

Bake the chicken breast in a non-stick pan with a little sesame oil.

Turn it on both sides to get color and let it cook for a while, covering it and lowering the temperature.

Once cooked, cut it into pieces and keep it warm covered with wrap.

We melt the butter in a saucepan and add the olive oil.

Once it is burnt, we sauté the vermicelli, stirring until it turns brown.

We add the rice and continue to stir lightly.

We add the chicken broth, add the bay leaf, salt and pepper and cover the pot.

We lower the heat and let the rice boil for about 15 minutes until the liquids are absorbed.

Little secrets:

i) If we want, we boil the chicken instead of cooking it.

ii) We can sauté the vermicelli and as it is crispy we can add it to the rice before serving it.

iii) We selectively sprinkle the rice with the blend of cheeses we love.
