In the past, Minoans used to cook chickpeas. Nowadays Cretans added  bitter orange to the recipe,  giving harmony to the taste. It is a food of high nutritional value since it has as many proteins as the meat. It is a source of folic acid, vitamin B9, which is essential for cell metabolism.

The chickpeas must be cooked with their peel, because it contains most of the calcium and insoluble vegetable fibres. We present you a  aromatic and very healthy easy Cretan recipe.

Little secrets

In the chickpea soup you can replace the orange with fresh lemon juice or bitter orange or even orange juice with grapefruit. Their aromas will excite you.

Cretan Chickpea soup with bitter orange

From the previous evening, we soak the chickpeas in a bowl of salted water and let them inflate for at least 8 hours.

The next day we strain and boil them in a pot with clean water and skim them at least two times.

Let them boil for about 90 minutes.

Five minutes before the end of cooking, add the olive oil, bitter orange juice, salt and pepper.

Stir in with a wooden spoon and let them boil again.

Remove the pot from the fire, let them cool for a while and serve in deep dishes.
