Ingredients

500 g Chickpeas from a good harvest
3 large dry onions chopped
1 garlic clove chopped
Half a cup of fine olive oil
3 ripe tomatoes grated, without the peel and seeds
1 tbsp tomato paste
salt
pepper
1 tbsp granulated sugar
1 sprig of rosemary
1 tbsp. coriander powder
1/4 tsp cumin powder
1/4 tsp cinnamon powder
EXTRA DELICIOUS SAUCE
Half a cup of fresh coriander
2 tbsp. fresh lemon juice
salt
Freshly ground pepper
1 tbsp fine olive oil or green olive oil
1 garlic clove

Taste beyond the ordinary

Efi is a dear friend who has made a very important career in the gastronomic scene of Athens and Mytilene.

She is very talented and was the creator of some of the trendy restaurants. Today the beautiful Dirty Ginger, in Chalandri, bears her signature.

Efi’s recipes were collected in a book titled “Mytilenean Tastes”, which is worth reading…

I asked Efi to give me the recipe of my favorite chickpeas with this different twist in flavor with coriander and I share it with you.

Steps

From the previous night we put the chickpeas in a bowl and cover them with plenty of lukewarm water.

30 minutes

We let them swell all night and the next day add 1 teaspoon of baking soda and leave them for 30 minutes.

We rinse them well and drain them.

10 minutes

We put the chickpeas in a large pot with cold water and boil them for 10 minutes.

We skim them, drain them and throw away the water.

2 hours

We put in new water to cover the chickpeas, adding two fingers more than before, then let them simmer for 2 hours until they are soft.

Meanwhile, in another smaller pot, we heat the olive oil over medium heat and sauté the onions and garlic for a few minutes until they wither and soften.

We add the tomato paste, grated tomatoes, sugar, spices and bring them to a boil.

Once the chickpeas are well softened, we add the tomato sauce and pour salt and pepper.

We simmer for 45 minutes, over medium heat, the chickpea sauce until it is semi-liquid and thickens.

We put all the ingredients of the extra delicious sauce in the food processor until they are homogenous and acquire a velvety texture.

We serve the chickpeas hot and pour the amazing sauce on top.
