Orzo with vegetables

In a pot we saute with olive oil the onion, the eggplants and the carrots in low heat then stir lightly with a wooden spoon. |

Add the peppers, the tomato, the dill, the parsley, the salt, the pepper and the sugar. |

10 minutes

Continue saute for 10 more minutes in low heat, until all the liquids deglaze. |

5 - 6 minutes

Pour 2 or 2 ½ cups of lukewarm water in the pot. In one cup add the tomato paste with lukewarm water and put in the pot. |

Simmer for 5 – 6 minutes then add the orzo and boil for 3 more minutes |

Turn off the heat, stir lightly and set aside. Leave it rest and thus allow its aromas to come out and the orzo gets soft. |

The food is ready to serve after one hour, in the meanwhile you may stir lightly with wooden spoon 2 – 3 times. |
