Ingredients

1 liter of Whole milk cow's or buffalo
100 gr. chocolate couverture grated
80 gr. granulated sugar
70 gr. corn flour
Zest of 1 orange
2 Egg yolks
50 gr. peanuts or 50 gr. hazel

Chocolate Cream from Cappadocia

The original recipe

If I recall something more intense this season it is my travels. I have missed them so much and my most recent trip was to Cappadocia, so the memories come to my mind first.


It is not only the fairytale geological relief in the country of Santa Claus, the memories of Hellenism, the churches οn the rocks, the balloons and also the delicious memories…
One of them is the chocolate cream with peanuts or hazelnuts which is one of the best in the world.
They are very used to it as a dessert but also as an accompaniment to apple tea.

 

Authentic Chocolate Cream

From Dere Suites Hotel, in Prokopi, Cappadocia

Steps

We melt the couverture in a bain-marie.

We put the 900 ml of milk, chocolate and orange zest in a saucepan and we stir while heating.

We put the sugar, the corn flour, and the 100 ml of milk in a bowl and we mix well to homogenize the ingredients.

In a clean bowl, we beat the yolks and we add them to the mixture, stirring.

With a tablespoon, we take little by little from the hot milk and we pour it into the mixture of the bowl, while stirring.

We lower the heat. We pour the bowl mixture into the remaining milk and we stir constantly until it boils and thickens.

We remove from the heat and we divide into individual deep bowls.

We put the chocolate cream in the fridge to cool, covering it with a transparent film.

2 hours

In 2 hours the chocolate is ready and we decorate with whipped cream and pistachio.
