2 tbsp. cognac or rum
3 fresh egg whites
1 tbsp. granulated sugar
1 cup viscous cream whipped with vanilla

Chocolate mousse with strawberries

The best recipe by Mr. Ambassador “hands”

Each spoonful floods the mouth with a sweet taste. In this case, the motto « Mr. Ambassador you are spoiling us» fits perfectly, because one of the most beautiful mousses, I enjoyed it, when I was invited to the embassy residence, on my recent trip abroad.

The Ambassador amuses himself with cooking and promotes in the best way our gastronomic culture, in the key country that he serves successfully. At formal dinners he directs the cooks so that the Greek products are perfectly expressed. He cooks for his friends himself, outside of protocol.

The recipe is his from the time he served in Paris.

Through the ages, chocolate mousse has been one of the most popular sweet flavors. They complete a wonderful dinner or embellish some beautiful personal moments.

Chocolate mousse with strawberry, mastic and mint leaves

We cut into small pieces the 50 gr. from the chocolate and keep them aside.

We cut the remaining 150 gr. chocolate and melt them in a bain-maire.

Once it has melted, we remove it from the heat.

In a clean and completely dry deep bowl, we beat the egg whites vigorously from right to left until they become a meringue without being tight.

Then we add the sugar little by little, while continuing to beat until we have a firm meringue.

We pour a large spoonful of meringue into the lukewarm melted chocolate.

We stir gently with the rubber spatula.

We add the cognac and mix

We pour all the chocolate mixture into the rest of the meringue and with gentle movements we mix with the rubber spatula until they are homogeneous.

Finally we add to the mixture 2/3 of the grated chocolate and the whipped cream. We stir gently until they are homogenous.

We leave it to freeze for 2 hours in the refrigerator.

We serve the mousse in deep dishes carefully and put it back in the fridge. We take it out 15 minutes before serving.

At the last moment, we cut a strawberry in thin slices, one strawberry on each plate and arrange them nicely. We sprinkle them with mastic liqueur.

We sprinkle the mousse with grated couverture chocolate.
