Ingredients

FOR THE SYRUP
900 gr granulated sugar
900 ml water
200 gr couverture chocolate finely chopped
50 gr Cocoa powder
FOR THE CHOCOLATE PIE
180 gr granulated sugar
180 ml sunflower oil
80 ml natural strawberry juice
200 gr Fine semolina
100 gr all-purpose flour sifted
100 gr Cocoa powder
8 fresh eggs
2 tbsp baking powder
half a tsp Chios mastic powder
FOR THE GLAZE
200 gr. milk cream
200 gr. couverture chocolate in small pieces
FOR THE FINISH
fresh strawberries cut in half

Chocolate pie with fresh strawberries

An epic chocolate pie

The sweet that is loved by young and old … Chrysoula made it to celebrate the fruiting of the first strawberry plant in her garden… The next day several more appeared and the rest of her strawberry plants were in bloom.

Chrysoula’s hotel has won many awards for its breakfast. The raw materials are excellent, the citrus and the other fruit trees are all organic, they give her fruits that are the raw material for the jams. For the first time she decided to create her own garden with strawberries and all kinds of vegetables. Chrysoula is a perfectionist in everything she does, so she takes care of the garden with much love. This way we will enjoy all the goodies from her garden on our plate, so breakfast becomes even more valuable.

She receives the eggs daily from local hens and the cheeses come from the milk of goats, sheep or cows of native breeds. Everything is planned and nothing in Hotel Ganimede is left to chance.

We added strawberry juice and Chios mastic to the chocolate pie and our dessert has a special aroma… but also color since each piece has its own strawberry for the finish. They are fresh, organic and very fragrant.

FIRST WE PREPARE THE SYRUP.

In a small saucepan over medium heat, we add the sugar, cocoa and water and mix. Bring to a boil until the sugar is completely melted, while stirring.

Once the syrup reaches boiling point, we remove it from the heat and add the couverture, whisking until the mixture has a velvety texture and allow the syrup to cool to use.

10-12 minutes

FOR THE CHOCOLATE PIE

We put the eggs with the sugar in a bowl of the mixer and mix with the whisk on high speed for 10-12 minutes until our mixture "fluffs".

At the same time in another bowl we put the flour, semolina, baking powder and cocoa and mix.

Then in the bowl with the sugar mixture we pour the corn oil and whisk until the ingredients are homogenous.

We add the flour mixture to the bowl of the mixer and stir with the rubber spatula until the ingredients are homogenous. At the last moment we add the strawberry juice and the mastic powder and mix again.

35-40 minutes

We pour the mixture into a buttered 25 x 30 cm pan and bake in a preheated oven at 180° C, for 35-40 minutes using the fan oven.

We test with a knife if it is cooked inside. If the knife comes out wet then we have to put it back in the oven for a while.

We remove the pan from the oven, carve superficially into pieces and immediately pour the syrup, slowly. It must be absorbing it before we keep going.

We leave it for 35 minutes to absorb the syrup and to cool.

WE PREPARE THE GLAZE

We put the couverture in a bowl and put it in the bain-marie.

Once it has melted, we add the milk cream and stir to homogenize the mixture.

We pour the glaze on the cold chocolate pie, cover it and put it in the refrigerator for 3 hours.

We take it out, cut it into square pieces and in each piece put a strawberry cut in half or thin slices of strawberry.
