Ingredients

3 cups flour for all uses
1/2 cup Thyme honey
1 tsp baking soda
a pinch Sea salt
1 cup butter at room temperature
3/4 cup brown sugar
2 tsp Ginger powder
1 tsp cinnamon powder
a pinch nutmeg grated
a pinch clove grated powder
1 egg
For the glaze
150 gr powdered sugar
1 Egg white
20 ml Lemon Juice
Food coloring paste

Christmas cookies… Gingerbread cookies

We give you the recipe to decorate the festival table and to excite our little friends as they mark the holidays.

Delicious biscuits that can be made on birthdays or even on christenings.

I always remember my mother making biscuits and decorating the tree or leaving them on the “passage” of the Santa … for obvious reasons.

Half of the kitchen filled with glaze, and we as apprentices  decorated our biscuits accordingly. My mother’s happiness … was beyond imagination.

The recipe was “adopted” by my aunt Ria Orphanoudaki who stayed in Vienna and always came for Christmas at home with new ideas of gastronomic, travel and much more.

In a bowl, sieve the flour to oxygenate and add the soda and the salt.

In the mixer bin, beat the butter at moderate speed and slowly add the sugar and continue to beat until the mixture is fluffy.

Then add the honey, the eggs and the flavors.

Start in three doses to pour the flour and whisk at low speed.

Finally, we speed up a little until we have a soft dough.

Roll the dough in a transparent film and leave it in the refrigerator to "rest" for one night.

Remove the dough from the cooler and with the roller bin open a 1 cm thick sheet and cut it with a pouch to make shapes of human beings, animals, geometric shapes, Christmas balls and so much more.

In a baking sheet put parchment paper and put the biscuits.

Bake in a well-preheated oven at 180 ° Celsius until it gets brown in color and hardens.

Leave the cookies to cool without covering them.

Prepare the glaze.

In the mixer bin, beat the sugar with the egg white for 5 minutes until it is like a meringue and in the end add the lemon juice.

We shape the glaze and with the cooking colorants we color them or with a brush we paint our cookies.

We decorate our biscuits by placing them on a red platter or on wooden surfaces.

Little secrets

If we want to hang the biscuits from the tree then before baking we open a hole and when they are ready we hang them with a red ribbon.
