500 gr unsalted and skinless cod
2 dry onions grated
2 green onions finely chopped
1 leek finely chopped
1/2 bunch chopped dill
1/2 bunch Parsley finely chopped
1 can blonde beer
250 gr self-rising flour
1 egg

Delicious and crispy cod croquettes is the proposal of our friend Gianni Vidali hotelier in Tinos. They tend to cook them, the day of the celebration of the Annunciation on the island of Virgin Mary. Steps

We get salted cod fillets preferably from Iceland and we initially shake them to remove a lot of the salt. With a sharp knife remove the skin and the hard parts. In a bowl with cool water put the fillets until they are covered completely, frequently changing the water to remove the salt faster. If you let it inside the water the whole evening it is better.

Drain the cod and begin to fleece the fillets almost in pieces.

Put them in a bowl and add the onions, green onions, leek, dill, parsley and mix by hand.

Finally add the egg, flour and beer and mix gently until the ingredients become a homogeneous mix.

Cover the bowl and let our mix «rest» for 25 minutes.

In a deep skillet heat the sunflower oil.

Wet a spoon in water and take tablespoons of the mixture and pour in the hot oil.

Fry for 2 minutes on each side until our croquettes become golden and with tweezers turn on the other side until they get golden brown.
