Cookies with jam

The children will love them

Delicious cookies and easy to prepare. Ideal accompaniment to coffee or afternoon tea. Nice snack for the kids to get to school. If we want to give more color and flavor to Laertis’s recipe we can use different jams, so we will have a colorful palette of different flavors…

We could even replace the jam with chocolate praline or hazelnut praline.

Done

We put the butter, flour, baking powder, sugar and eggs in the bowl of the mixer.

We beat with the whisk until the mixture is homogenous and we have a dough that comes off the walls of the bucket.

15 minutes

We wrap the dough in plastic wrap and we leave it in the fridge for 15 minutes to "rest".

We take the dough out of the fridge and we place it on the counter. With the rolling pin, we open the dough into a thin sheet 3 mm thick.

With the help of a 4 cm diameter cookie cutter, we cut the dough round and we place them in the pan, on which we have spread baking paper.

We make a hole in half of the dough discs, using a smaller cookie cutter. We shape the excess dough again.

We open it with the rolling pin and we create dough cookies.

We bake in a preheated oven at 180° C, on the fan for 15 minutes until our cookies are golden brown.

We take them out of the oven and we place them on a grill to cool well.

Then with a teaspoon we spread the jam on the whole cookies.

We sprinkle half the cookies with icing sugar.

We close the whole cookies with the jam with the cookies that we sprinkled and if we want extra jam we put a little more in the center of the cookie that is empty.

We serve our cookies immediately or if we want to keep them always fresh and crunchy we put them in a metal box.
