Ingredients

500 gr Crust
FOR THE CREAM
1 ½ liter Full-fat milk
500 gr granulated sugar
200 gr semolina half thin & half thick
6 Egg yolks
4 eggs whole
375 g of margarine
2 vanillas
FOR THE SYRUP
7 cups granulated sugar
5 cups water
peel of an orange or lemon, whole

The absolute sweet of Carnival

In recent years I go to the Carnival of Patras since my dear friends Costas and Vasso Giannopoulou, live there and in fact the whole parade of carnivalists passes under our feet.

Participating in this party with inventive costumes and the mood in red is an experience.

Traditionally the sweet offered on Sunday is the galaktoboureko, the baklava, the flutes filled with dried fruits 

We asked the goldsmith Chrysoula of Ganymede Hotel to prepare the recipe that I loved.

8 minutes

In a saucepan, we boil the water with the sugar and the orange peel for 8 minutes. We stir and after the syrup has set, leave it to cool.

We put the milk with the sugar in a saucepan and we mix.
Once it heats up a little,we add half the amount of margarine and the semolina.
We beat all the eggs lightly with the hand mixer and we add them to the milk. We stir slowly with the whisk until the cream sets.

We heat the rest of the margarine slightly and we butter the pan with a brush.

We start to lay the first 7 leaves after we pass them with margarine.
We make sure they protrude slightly from the pan.

We pour the cream and spread its surface. We turn the protruding leaves and we spread them on the cream.

We put the remaining leaves, buttering them.
We lightly carve the milk pudding into pieces.

We bake in a preheated oven at 180oC for 50 minutes until the sheet is golden brown.

Once we take the milk pudding out of the oven, we pour in the syrup that is lukewarm.

About 1 hour

We leave to cool for about 1 hour and serve.
