Ingredients

450 gr. all-purpose flour sifted
50 gr. corn flour
1 tsp. salt
2 tsp. sugar
2 not full cups of lukewarm water
2 tbsp. fine olive oil
1 sachet of yeast
300 gr. feta cheese PDO
200 gr. regato cheese grated
2 tbsp. fresh fennel chopped
1 shot of Ouzo or tsipouro or white wine

1 egg yolk

This aroma of freshly baked bread stuffed with your favorite cheeses is unforgettable… To wake up, see the sea and enjoy the best breakfast… A delicious cheese bread is enough to make your day and it is so easy to make.

Efi makes them with great mastery. Following the recipe, I also made them using instead of regato cheese, smoked Vermiou cheese or an aged gruyere cheese. Fennel gives a special aroma just like ouzo. In fact, to match the taste with that the cheese bread of Mykonos, I wet my hands with ouzo while I was kneading and it became much more aromatic. So I advise you to follow my advice.

We serve the pieces of cheese bread on a plate and if we want we sprinkle them with the smoked paprika that my friend likes so much.

Delicious cheese bread

In a large bowl we put the two sifted flours, the yeast, the salt, the sugar and add a little water.
We knead vigorously until you have a pliable dough.

1 hour

We cover the dough and leave it for 1 hour, in a warm place until it doubles.

We cut the dough into two equal pieces.

We butter a baking sheet and put a piece of dough, after stretching it well at the bottom, so that it covers the whole baking sheet.

We put the feta cheese in a bowl and crumble it with a fork and add the regatta and fennel.

We sprinkle the whole surface with ouzo.

We stretch the other piece of dough with delicate movements and cover the surface.

We brush the surface with egg yolk.

We let it rest for another 20 minutes.

We bake in a preheated oven at 180° C, upper and lower heat, for 20 minutes. We reduce the oven temperature to 170° C and bake for another 15 minutes.

We remove the cheese bread from the oven and leave it for 25 minutes. Immediately after, we cut it into pieces and serve.
