Eggplants with almonds in the oven

Ingredients

3-4 flask eggplant
Half a kilo of ripe tomatoes
1 dry onion , chopped
olive oil
2 cloves garlic , finely chopped
1 tsp. Brown sugar
1 cup finely chopped whitened almonds
Sea salt
Cayenne pepper

Taste unique and delicate. In Crete they use in their culinary creations nuts and fruits. I really liked, the eggplants baked with almonds prepared in Makri Gialo in Ierapetra. We tasted them by the sea, with the fireplace burning, wine, good conversation and music … The happiness of life is a series of such «small moments» …

Wash our eggplants.

Slit the eggplants with a skewer or fork and put them in a pan. Bake them whole in the oven grill for 15 minutes by turning on both sides until they turn black.

Prepare the sauce.

In a frying pan sauté the onion in olive oil and add the tomato, garlic, sugar and salt.

Cover the pan and let simmer for 7 minutes.

In the sauce do not add water. The only liquids are those of the tomatoes.

Peel the eggplant holding it carefully over a plate and with a fork only remove the flesh.

Mix the eggplant with tomato sauce and add the almonds.

If you prefer a spicier version of the dish, add a little cayenne pepper.

We put our eggplants in a baking dish or ramekin and bake in the oven at 180 °C for 10-15 minutes.
