Ingredients

4 big eggplants (flaskes) medium-sized
olive oil
A little οregano
Sea salt
Freshly ground pepper
FOR MINCED MEAT
600 gr. minced chicken
4 tbsp. olive oil
1 onion Chopped
1 garlic clove grated
1 tbsp. tomato paste
2 grated fresh tomatoes
1 pinch of sugar
¼ cup of white wine roditis or moschofilero
2 pinches cinnamon
A pinch of nutmeg
A pinch of cloves
Sea salt
Variety of Freshly grated peppers
FOR SPRINKLING
300 gr. mixture of grated cheese gruyere, kefalotyri, kasseri or emmental or gouda

Eggplants “papoutsakia”(shoes) with minced chicken and cheese

Also known as “papoutsakia”…

 

A favorite food, in its original form, a little troublesome, which while we like it we avoid making at home.

So, we give you a very healthy recipe, since we use chicken instead of beef and replace the béchamel, which is delicious but heavy and with a degree of difficulty in its success, especially for the workers, who do not have so much time.

So the solution of cheeses gives deliciousness and everyone likes it. The cheeses should be coarsely ground and when I made this food at home I added a little blue cheese which gave a nice taste. I also added ouzo to the minced meat instead of wine and it got a nice aroma.

I would also like to remind you that eggplant is very nutritious because it is a good source of folic acid, vitamins K, C and B6 and many antioxidants, mainly flavonoids.

We wash and we cut the eggplants in half lengthwise. Using a knife, cross-cut the flesh and we place them on a plate. We spread them with olive oil and we sprinkle them with salt and pepper and a little thyme. We bake them in a well preheated oven at 200ºC for 30 minutes to soften.

We heat the olive oil in a saucepan and we sauté the onion until it withers. We add the garlic and after 1 minute the minced meat. We stir and let the minced meat cook first from below and then we turn it with a wooden spoon on the other side. The secret to the success of minced meat is not to stir it constantly.

We add the wine and we let the alcohol evaporate.

We add the paste and sugar and we mix with a wooden spoon until the base of the pot.

We add the tomatoes, we add salt and pepper and cook over medium heat for 20 minutes, until the liquids are absorbed.

Two minutes before the end, we add the cinnamon, nutmeg, cloves and peppers.
