Ingredients

1 packet fyllo for kataïfi
200 g butter
FOR THE CREAM
500 ml fresh milk
125 g sugar
100 g sugar
7 Egg yolks
80 g flour for all uses
140 g butter
FOR THE WHIPPED CREAM
500 g heavy cream
2 cups powdered sugar
1 Vanilines
FOR THE SYRUP
900 ml water
1 kg sugar
1 tbsp Lemon Juice
FOR THE SPRINKLING
cinnamon
almonds Roasted, or pistachios

Ekmek kataïfi

In the beautiful “Megalo Chorio” (meaning big village) of Evritania with its stone houses,we took a look at the imperious mountains covered in snow and its rivers. At last we approached the square where we found Karveli’s cafe, next to the clock . A well-know cafe for its galaktoboureko which is on par with its other famous sweet, ekmek kataïfi. People usually serve those sweets in Evritania. Indeed they are very tasty thanks to the milk and butter that are exquisite.

Nevertheless visiting Karpenisi and the surrounding villages,  is highly recommendable on snow days .

Ekmek kataïfi

Melt the butter and pour it on the fyllo. We unscramble the fylla with our fingers to let the butter through.

Spread the butter on the pan and place the fyllo.

Bake in a well-preheated oven at 180°C in air for 30 minutes until it gets a golden color.

Prepare the cream.

In a pot, boil the milk with 100g. sugar and add butter and vaniline.

At the same time, in the mixing bowl, we whisk the yolks with the rest of the sugar until they foam.

We gradually pour the pot mixture into the bowl and stir gently with a confectioner’s spatula.

Place the pot in the fire.

Once the mixture is boiled, add the sifted flour and stir gently with the whisk until the materials are homogenised and let it cool.

Prepare the syrup.

In a pot add the water and the sugar and boil for 4 minutes. In the last minute add the lemon drops.

Pour the syrup onto the baked fyllo for kataïfi and place the cold cream on it and smooth the surface out.

In a mixing bowl, we whisk the heavy cream, sugar and vanilla and in 2 minutes the whipped cream is ready.

Over the cream we smooth out the whipped cream and sprinkle with roasted almond and cinnamon or pistachios.
