Ingredients

150 ml Natural juice of lemon and orange
100 ml Tsipouro
50 ml olive oil

1 kg walnuts clean and fresh
1 kg Thyme honey fine
150 gr. Toast crumbs

The original recipe of Tinos, from the confectionery Halari of Tinos

The most characteristic sweet of Tinos, all aroma and taste. They call it a fish because it has the shape of a small fish. The best from the best confectioner of the island Leonidas Halaris. Every time I arrive in Tinos I will go to get it and when I leave I take it with me again to have this aromatic taste that floods my taste buds.

The fish is also made in the oven and sprinkled with powdered sugar.

The insistence on the excellent quality of the ingredients has made the Halari patisserie known throughout Greece and beyond. His wife is his muse and he stands by his side. She is gentle and sweet and because I love them very much and I think they love me too they gave me their recipe which is a well kept secret.

In a bowl, we pour all the liquid ingredients for the sheet and after mixing them by hand, slowly we add the flour.

We knead vigorously until all the ingredients are homogenous and we let our dough to «rest» for 30 minutes.

With the rolling pin we open a sheet and with the help of the cookie cutter we cut it into round pieces.

We heat the honey to 45° C and we add the coarsely chopped walnuts and some of the breadcrumbs. We mix with the spatula and taking small amounts we start to give shapes to the filling like meatballs.

On each round sheet we put a stuffing meatball, giving as much shape as possible like a fish. Carefully we close the sheet by pressing its ends with a fork or by hand so that the filling does not leave.

We put corn oil in the pan, we let it "burn" and fry the fish until they turn golden. We spread them on absorbent paper to remove the many oils.

We sprinkle with walnuts and we enjoy our fish.
