Ingredients

10 fresh eggs
2 pinches nutmeg powder
4 tbsp. olive oil
3 breakfast sausages cut into slices half a cm thick
5 medium sized potatoes cut into slices half a cm thick
1 medium sized dry onion grated
2 spring onions finely chopped
Half a cup of fresh milk
salt
Freshly ground pepper
οregano
1 tbsp. fresh mint chopped

 Rich Taste…

Authentic taste that characterizes the beautiful island of Andros, which is my weakness. It is no coincidence that for 10 years I had the public relations of the hotel Paradisos of Andros, a subsidiary of St. George Lycabettus of Athens. I have only wonderful memories and creative moments…

Andros has hidden beauties that you have to look for to discover… they do not appear to you immediately… but there are so many.

It has all the amazing mountain villages, a Chora painting, it has springs, rivers, monasteries, Byzantine chapels, unique flora and fauna… museums, events of high interest.

It has an interesting gastronomic identity.

The beaches are dreamy, the waters are crystal clear and crystal clear.

It is worth… to know the island of my heart.

Furtalia is made with traditional sausages and glyna, which is the fat that sausages retain. But I thought to present you its lightest form and to make a delicious trip to Andros even with the ingredients that you will find in your place.

We heat the olive oil in a deep pan and add the sausages for 3-4 minutes, turning them to brown on all sides.

We add the potatoes, onion, spring onions and stir for 5 minutes until the onion withers.

We lower the temperature and cover the pan for 10-15 minutes until the potatoes are soft.

In a large bowl, we throw the eggs and the nutmeg and beat them with the whisk.

We add the milk, salt, freshly ground pepper and continue beating with a whisk until the ingredients are homogenous.

We uncover the pan and pour over the potatoes and sausages with the eggs.

We sprinkle with oregano and add the mint.

We shake the pan so that the egg mixture goes everywhere.

We continue frying and turning the omelette so that it comes out whole requires certain finesse.

If we want, we bake the omelette in a preheated oven at 180° C for 15 minutes.

Once the omelette is well browned we put a knife in the center and if it comes out clean it means that the furtalia has been cooked.
