The halva is prepared in no time and father Filaretos with great care, he embroiders it with a stick and walnuts from the monastery. «I like to sweeten people, to take away some of their burdens …To forget their problems for a little while … .to take a breath, to see things from a distance «

In a large pot, sauté in olive oil the semolina and stir quickly with a wooden spoon to prevent from sticking.

At first semolina darkens and then it becomes blond.

In a pot boil water and sugar and finally put the orange juice.

Very carefully we pour the mix all at once in the semolina and we stir constantly.

Be careful not to «burn» ourselves.

Bring to a boil and pour the mix in our baking pan.

Allow to cool and with a wooden skewer and walnuts we create the shape of the cross or the emblem of the monastery.

We serve our halva if we want also with quince spoon sweet or any other spoon sweets you might have.
