Rinse the chickpeas.In a large bowl, soak the chickpeas for 12 hours at least in 2 1/2 liters of cold water, without salt, without soda. |

The next day, drain the chickpeas and grind them in the multi adding tahini, garlic, fresh lemon juice and salt until the hummus is a velvety cream with rugged texture. |

We serve the hummus in a small platter and we rinse it with olive oil and sprinkle with paprika, herbs, pine nuts and fresh tomato. |
