Ingredients

600 gr Chickpeas boiled
300 gr tahini
5 Garlic cloves
10 tbsp fresh lemon juice
300 ml fine olive oil
250 ml cold water bottled
2 tbsp. cumin
salt
Freshly ground pepper
FOR THE FINISH
Smoked paprika
olive oil
Parsley
Tomato diced
pickled cucumber diced and in salted capers

Hummus with tahini

Hummus is the perfect combination of legumes, lemon and tahini that gives food rich in protein of high biological value, that is, it is like consuming animal protein. Tahini is an excellent source of copper and a good source of calcium, magnesium, phosphorus, zinc, iron and fiber. Protects against atherosclerosis, hypertension and diabetes.

It is also a very good choice for making sweets, replacing butter.

Hummus with tahini

10 to 12 hours

From the evening we put the chickpeas in the water for 10 to 12 hours and change the water once.

40 to 60 minutes

The next day, we put the chickpeas in a saucepan and cook them for 40 to 60 minutes until they soften.

We strain them and keep 200 ml of the water.

We put the chickpeas in the blender together with the lemon juice, the tahini, the cumin, the garlic, the salt and the ground pepper and beat them until they are mashed and become like cream.

Continuing to beat, we slowly add the olive oil and the chickpea broth and continue to beat for 12 minutes. Then add the cold water and continue to beat for 5 minutes.

We serve the hummus sprinkled with paprika, pour olive oil over it and finish with tomato paste, pickled cucumber, capers and fresh chopped parsley.
