Ingredients

2 glasses olive oil
1/2 glass sugar
1 glass orange juice
1 tsp orange zest
1 shout cognac
1 tsp Baking soda
1 tsp baking powder
1 kg flour for all uses or as long as it gets
For the stuffing
1 glass nuts crashed
1 tsp Cinnamon powder
1/3 tsp clove
For the syrup
1 1/2 glasses water
1 glass sugar
1 1/2 glasses honey

Isli – embroidered melomakarona

Traditional Christmas sweet of the east with walnuts

Like a Good-Luck charm, melomakarona are mostly crescent-shape, and with drawings by housewife with the use of tweezers, grater, fork or needles. Traditions suggests to make as many drawings as her sorrows in order to overcome them… and let her heart be full of empathy and kindness. Afterwards she top Isli melomakarona with walnuts, cinnamon, raisins or almonds with good grace…

At New Karvali, in Kavala,  I tasted the best ones made by Elsa,a friend of emvolos.gr. She is a famous cook who keeps the tradition and knows how to respect her roots …

In the mixer bin, we whisk the sugar with olive oil vigorously it's creamy like texture.

We melt baking soda in a glass of orange juice and the baking powder in a glass of cognac.

Add the orange zest, the baking soda with the orange juice and the cognac with the baking powder to the mixture of sugar.

We use the mixer for just a second to homogenise the ingredients.

Sift the flour and add it slowly to the mixture.

Whisk the mixture in the mixer until it is soft and supple.

Let the dough "rest" in a warm place for 45 minutes.

Cut the dough in a size of a nut for each isli, and press it in the middle until it spreads a bit.

In a bowl, we mix all the ingredients of the stuffing and use a teaspoon to fill each isli.

With our palm we give a triangular or oblong shape .

Start shaping the surface with the fork or a special tool.

Brush with olive oil a baking sheet and spread the set isli in line with the embroidered surface upwards.

20-25 minutes

Bake in a preheated oven at 180°C for 20-25 minutes.

Let isli cool and prepare the syrup which should be warm.

In a saucepan put all the ingredients until the syrup is thickened.

With a pierced ladle, "sink" the isli into the syrup to stay crisp.

We sprinkle isli with some nuts but Elsa and I prefer not to use any.

In Cappadocia they usually put rose petals around isli on the plate for decoration....
