Ingredients

INGREDIENTS FOR 8 PERSONS
10 onions big, blond
FOR THE FILLING
2 dry onions grated
3 fresh onions finely chopped
¼ of the cup olive oil
800 gr. minced pork or beef
2 cups of Carolina rice
¼ of the cup cognac
½ bunch of dill finely chopped
½ bunch of Parsley finely chopped
½ bunch of mint chopped
salt
Freshly grated peppers
FOR SERVING
yogurt with mint
FOR THE SAUCE
2 cups tomatoes grated
1 tbsp. tomato paste
1 tsp. sugar
2/3 cup olive oil
salt
Freshly grated peppers

Kelemia is the famous food of Galaxidi and the truth is that they are very tasty. They have the taste of baked onion and contain minced meat with aromatic herbs and cognac. Its flavor “triggers” tasty memories and makes you want to come back and taste it one more time.

Clean the onions and cut them vertically.

Boil them in salted water on medium heat for 20 minutes to open the leaves of the onion one by one.

Drain and leave them to cool.

In a bowl, we add the minced meat, rice, dill, parsley, mint, olive oil, tomato, salt, pepper, onions and cognac.

Mix the filling with a wooden spoon until the ingredients are just combined.

Separate the leaves of the onions, open them and add the filling with a spoon carefully.

We create an oval shape like onion with the filling. We place it on the baking pan and continue the same process with the remaining onions.

When we finish, we pour olive oil, fresh tomato juice, and liquids left over from the mixture on the kelemia.

Bake in a well preheated oven at 200°C for 45 minutes.
