Kokoretsi from Roumeli

 

Roumeli is well-known for its local spits, kokoretsi and kontosouvli. The sure thing is that I have never tasted a better kokoretsi than that one. No doubt,  they know how to tame the “roasting flames” in Roumeli.βαρδούσια

The quality of the ingredients is important. They only use offal from milk lambs. Since they feed on herbs, their taste is unique, which is why Marina uses only salt and pepper and no other spices.

In my beloved Dichori, the dreamy village of Vardousia, located in the center of Roumeli, Marina shares the secrets of the best kokoretsi with us.

We wash the intestines two times from inside and outside and pass them with lemon.

Cut the livers in pieces using only the liver, lungs and sweetbreads.

We do not use the heart and the throat because they are rough.

We clean the spit well and shower it with lemon. We pour salt and pepper in the pieces.
