Ingredients

Ingredients for four people
500 gr. ground beef and minced pork half and half
2 tbsp. stale bread grated
50 ml light cream
1 egg big
1 tbsp. broth concentrated from beef, beef or chicken
Half onion chopped
25 gr. fine butter
1 tsp. Freshly ground black pepper
1-1 ½ tsp. Sea salt
For Frying
fine butter
FOR THE SAUCE
1 cup sour cream
1 ½ tsp. soy sauce dark
1 cup beef broth warm
25 gr. butter
salt
Freshly ground pepper
2 tbsp. jam forest fruits or berries or cherries

Köttbullar, Swedish meatballs

Köttbullar, is the national dish of Sweden and is served with fresh boiled potatoes and the aromatic red bilberry sauce, which are antioxidants and so beneficial. Tradition holds well… On my last trip to Sweden they also gave me the authentic recipe that I share with you.

Every family, every region has its own recipe. Great chefs create their own version and compete with each other which one will be the best. Of course, every Swede states that his mother’s recipe is the best and the secret seven-sealed; I think it is in the excellent quality of the ingredients.

Traditional Swedish meatballs with mashed potatoes

In a large bowl we put the bread crumbs, cream, concentrated broth, egg and knead until the mixture is homogeneous.

We cover the bowl and let it "rest" for 5 minutes.

We put the butter in a pan and sauté the onion until it withers.

We add the cream mixture.

We add salt and pepper and stir and finally add the minced meat.

We mix very well with a fork or by hand. Be careful not to melt the minced meat

We shape a small meatball and fry it to taste it, in case it needs correction.

We must calculate that for each meatball we take 1 tablespoon of the minced meat mixture.

After making the meatballs in the size we want, fry them in a deep pan with butter until they turn brown, turning them on all sides for about 5-6 minutes.

We remove the meatballs from the pan and place them on a plate lined with absorbent paper.

In a bowl, we mix the cream with the corn flour and add the soy sauce. Stir and pour the mixture into the pan where we made the meatballs.

We stir lightly with the whisk and let the sauce boil in the pan for a few minutes. Add salt, pepper and jam and mix lightly.

We put the meatballs in the sauce and shake the pan.

We serve the meatballs with mashed potatoes and the famous lingonberry jam, maybe chopped parsley.
