Genuine recipe for homemade koulouri

Thessaloniki is famous for its koulouri, which is recognized throughout Greece as from Thessaloniki. It is the most pleasant for breakfast and is combined with cheeses or whatever else whets our appetite. A koulouri in hand, an orange juice and a coffee is the best for a quick and healthy breakfast wherever we are. Recently, it is common to make them sandwiches and sell them like stuffed Turkish simit.

Koulouri from Thessaloniki

10 minutes

We put the water with the yeast in a bowl and we mix with a spoon until the yeast dissolves and we wait 10 minutes for it to rise.

We put both flours, yeast, sugar and salt in the mixing bowl and we beat them on a medium speed for 8 minutes until the dough becomes pliable and comes off the walls of the bowl.

We grease a large bowl and we put the dough to "rest" in a warm place, covering it with plastic wrap for 1 hour or more until it doubles in volume.

We sprinkle flour on the counter and we knead the dough for a few seconds. We cut it into balls of 100 grams. We shape thick cords with our hands and twist it if we want to make it as a single braid. If we want to shape it, we just join the edges and our koulouri is ready.

All koulouria should be about the same size.

We put the water with the sugar in a bowl and stir to dissolve. We pour the sugar water into a spray device and we sprinkle the koulouri well.

We sprinkle with sesame seeds on both sides.

We line the pan with baking paper and place our koulouria leaving a little space between them. We bake in a preheated oven at 190 ° C with convection for 20 minutes.
