Kumquat spoon sweet

A taste that takes us to Corfu, since kumquat was first cultivated there. There we find it in various versions from spoon sweet and liqueur to candy or wrapped in the heart of an almond paste.

In our last gastronomic getaway on the island of Faiakes, my girlfriend and I tried the most famous version of the kumquat spoon sweet but Nana put her own touch and the sweet was improved immensely…

We wash the kumquats and we clean them from their stalks.

We pierce the kumquats with a knife and we put them in a large pot.

We simmer over medium heat and we add water until they are completely covered.

Once they boil, we lower the heat and we let them simmer for another 5 minutes, adding the cinnamon.

We carefully empty them into a colander and we remove the cinnamon.

We rinse them with ice water.

We put sugar, lemon juice and water in another large pot and we let them boil for 20 minutes.

We add the kumquats.

We lower the heat and we simmer for about 2 hours, until the fruits are soft.

We put in a large saucepan with plenty of water two glass containers with a capacity of 500 ml each, we boil at low temperature for 15 minutes so that they are sterilized.

We take them out, with tweezers, we turn them over on a towel to dry well.

We turn them and fill them with the kumquats with a spoon.

We close them well and we turn them over overnight.

We keep the sweet in a cool place and we consume it all year round.

The glass jars must be completely dry because otherwise our dessert will be sugary.
