Ingredients

500 gr. ground beef shoulder
500 gr. minced lamb leg meat
2 spring onions very finely chopped
2 dry onions finely chopped
4 tbsp. olive oil
1 ripe tomato grated
1 orange pepper cut into small cubes
1 garlic clove smashed
1 tbsp. οregano
1 tbsp. sumac
2 tbsp. Parsley finely chopped
1 tbsp. fresh mint finely chopped
2 tbsp. yoghurt
1 cup breadcrumbs or chickpea-leavened toast grated
1 shot of Ouzo
salt
freshly ground peppers

Lela’s burgers

My mom always had a very open house. During the holidays she always made a buffet and every year the delicious creations were enriched with new flavors that she found interesting. Her salads were unmatched like her meats, seafood was not her strong point, perhaps because fish was always associated with seaside taverns and never with home. The only thing she made sometimes was fish soup.

Her burgers were famous and she always served them with rich salads, tzatziki or her political beetroot salad with walnuts. Crispy pies always accompanied the burgers. I have her recipe and so I gave it to my friend Efi Markozanes and she made burgers for her birthday buffet, which we celebrated in Mykonos.

The recipe I make at home is without minced lamb meat, but with beef and pork in a ratio of 70-30, but I follow the rest to the letter. The burgers are also very nice and with minced chicken meat with vegetable sauce. The choice is yours.

about 8 minutes

We heat the olive oil in a pan and sauté the dried and spring onions until they soften for about 8 minutes.

We add the grated tomato and increase the heat and stir lightly until the sauce thickens.

We let the mixture cool.

In a large bowl put the beef and minced meat, oregano, sumac, garlic, mint, parsley, yogurt, peppers, a little salt and finally the tomato mixture.

We slowly add the breadcrumbs because the dough must be malleable.

We knead vigorously by putting our fingers deep in the minced meat dough and turn it 2 more times.

Finally we add the ouzo and knead once more.

We cover the bowl with the minced meat with a transparent film and leave it in the fridge for 3 hours.

We take the bowl out of the fridge and knead lightly once more, letting it reach room temperature.

We turn up the heat and let the sauce thicken for a few minutes. We let the mixture cool.

We shape the burgers to the size we want and bake them in a preheated oven on the oven grill and place a baking sheet with water under the grill.

We bake the burgers for 8 minutes on each side until they get a nice color.

If we want to bake the burgers in the oven, put them in a pan that we have spread baking paper on and bake in a preheated oven at 180° C for 25-30 minutes, turning with a spatula on both sides until they are well cooked inside and out…
