Ingredients

1 ½ cup of coffee powdered sugar
1 cup of coffee sunflower oil
2 eggs
Juice of 1 lemon
zest of 1 lemon
1 vanilla
1 tsp. baking powder
3 glasses of water flour not completely full

Lemon biscuits

Delicious and aromatic…

Galaxidi has a lemon scent and is beautiful all year round… I love seeing the loaded lemons with fruit and flowers emerge through the gardens of the captain’s houses.

The graphic city is suitable for presenting the lemon cookies from Constantinople of grandmother Sofia and the recipe is in the hands of Chrysoula Papalexi, of the Ganymede Hotel. The best I tried next to the famous lemon cream in her backyard for breakfast. It is no coincidence that it is multi-award winning.

They are so easy and so delicious. Try them along with an aromatic tea, I’m sure you will love it.

We put the eggs with the sugar in a clean and completely dry bucket of the mixer and we beat them with the whisk until they are "fluffy".

We add the lemon juice, the olive oil, the flour, sifted slowly, the lemon zest, the vanilla and beat with the hook until we have a soft dough.

We form them into balls and we dip them in powdered sugar.

We lay non-stick paper on a baking tray and we place the cookies.

We bake in a preheated oven at 170° C for 15 minutes.

We take them out of the oven and we leave them to cool.
