The secret recipe… for 150 years

If you pass from Karystos, you should visit the historic archaeological site,  Montofoli Estate. There is an impressive staircase with 157 stone stairs which are remains of old buildings. The vineyard of 16 acres is organic. The famous sweet wine “Montofoli Estate” is made just as it had been in ancient times.κρασί, ποικιλίες

The varieties of wine are from Greek islands such as red Liatiko from Crete, white variety Athiri from Rhodes and Asyrtiko and Aidani from Santorini. Because of the climate of Karystos with the strong winds, the vineyards’ leaves tend to fall and the grapes bask under the sun. That’s how the wine acquires its special colour and aroma.

The owners of the Estate make jams from the famous lemons and oranges of the citrus garden.

My beloved friend Danae Karakostas shares the secret recipe with us .

Every time I go to the Estate, I try their dreamlike wine, some chocolate and certainly the lemon or orange jam.

Clean the lemons and take of the peels.

Cut the peels into pieces.

Boil them in water for 10 minutes so as to remove bitterness, then strain and repeat 2 more times.

Chop the peels and put them in the pot along with the lemons and add the sugar and water.

Boil in strong heat and stir at intervals to avoid getting stuck.

Before it begins to homogenised, we mash with a hand blender.

Continue boiling until the jam is homogenised.

A few minutes before we remove it from the fire, pour the orange juice.

Let the jam cool and mix it to homogenise the mixture.

Put the cold jam in sterilised jars and keep them in a cool and dark place.
